1 Tablespoon Vegetable Oil
1 1/4 Cups Water
1 1/2 Cups Flour
3 Large Bananas
1/2 Cup Chocolate Chips
1. In a large bowl, mix very well the eggs and sugar. Use an electric blender if desired. Add in vegetable oil, flour and water. Mix until no bumps are felt in the mixture.
2. Grease a medium saucepan and medium heat it until very hot. Put in 2 tablespoons of pancake mixture and top with a couple of slices of banana and one teaspoon of chocolate chips. Let it cook until almost dry. Turn over and cook for one more minute.
3. Do this with the rest of the mixture.
4. To serve, put 4-5 pancakes on top of each other and top with maple syrup and shredded coconut.
