Olive oil is the most prevalent fat or oil used in the preparation of various dishes, that include Eggplant, artichokes, squash, tomatoes, legumes, onions, mushrooms, okra, cucumbers, and a variety of greens are served fresh, baked, roasted, sautéed, grilled, and puréed.
